摘要:: 实践是工程的灵魂与根本，也是工程教育的本质要求。实践教学是工科专业本科教学的重要组成部分，在“卓越人才”工程素质培养中起着举足轻重的作用，是解决实践动手能力不足的最佳办法。刨析当前食品科学与工程专业实践教学中存在的问题根源，结合集美大学实践教学情况，尝试通过调整实验教学课程体系、建设校内外实践平台和基地、提升师资队伍工程实践指导能力和完善教学质量评价体系，突出强化工程化训练等措施，使学生的操作技能、工程综合素质和创新意识得到提高。

Abstract:: The practice is the soul of the project and fundamental, is also the basic requirement of engineering education. Practice teaching is an important part of undergraduate teaching for the engineering major and plays an important role to enhance the “excellent talent” engineering quality, it is the best way to solve the lack of practical ability. This article analyze the food science and engineering existing problems in the practice teaching based on the Jimei University, and through adjustment the experimental teaching course system, construct the practice places, improve the teachers ability to guide engineering practice and perfection teaching quality evaluation system. The students’ operating ability, engineering quality and innovation has made significant improvement though strengthen engineering training. It has a good practical guiding significance for Practice teaching.
